Summer Learning Journey - Week 2 - Day 5 - Bonus Activity

For this Summer Learning Journey I had to tell what is my favourite sweet treat or dessert. After that I had to find the recipe for my favourite dessert with a picture. I learnt that Rachel (Manager of the Summer Learning Journey) favourite sweet treat is cookies with cup of tea

My favourite dessert is chocolate mud cake with ice cream. I usually have this on special events like birthdays.

  • Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 22cm round cake pan. Line base and sides with baking paper.

  • Melt butter in a large saucepan over medium-low heat. Add chocolate, sugar and 1 cup cold water. Cook, stirring constantly, for 3 to 4 minutes or until smooth. Transfer to large bowl. Cool for 10 minutes.

  • Add eggs. Stir to combine. Add flours and cocoa. Stir until smooth. Pour mixture into prepared pan. Bake for 1 hour and 30 minutes or until a skewer inserted in the centre has moist crumbs clinging. Stand for 10 minutes in pan. Turn out onto a wire rack to cool.

  • Meanwhile, make chocolate ganache: Place chocolate and cream in a small saucepan over medium-low heat. Cook, stirring constantly, for 3 to 4 minutes or until smooth. Transfer to a bowl. Refrigerate for 30 minutes or until thick enough to spread. Spread over cake. Top with chocolate flakes. Stand for 10 minutes or until ganache is set. Serve.

    Mālō e lelei Ofa,
    Who doesn't like a mud cake with chocolate ganache?! I love it too! However, I would rather have mine with greek yogurt instead of ice cream. :)
    Once again, you managed to write a good post in here. For the future when posting a recipe don't forget to add the list of the ingredients before the cooking method.
    Also, it's great that you used a picture and added the reference to it. The use of the image made your post very appealing.

    Good job on completing this summer learning journey activity. Like you, I also like to eat chocolate cake (chocolate cake + chocolate icing + chocolate ice cream is amazing!). Keep up the amazing work Ofa!
